• Piperonylic acid is an aromatic acid produced from pepper. The freshly prepared product is colorless needle-like crystals, which will rapidly turn yellow if exposed to light. The melting point is 216-217°C. It sublimates to yellow needles and partially decomposes during the melting process. Maximum UV absorption in methanol is 340nm (ε28 800); solubility: 1 part is soluble in 50 parts of boiling alcohol, 1 part is soluble in anhydrous ethanol at 25℃, basically insoluble in water, ether, benzene and carbon disulfide.
