L-Hydroxyproline Chemical nature
White flake crystal or crystalline powder. It has a unique sweetness in bitterness, and can improve the flavor and quality of fruit juice drinks and soft drinks. It has a special flavor and can be used as raw material for fragrance. The melting point is 274°C (decomposition). Easily soluble in water (25℃, 36.1%), slightly soluble in ethanol.
L-Hydroxyproline production method
It is made of gelatin, bone glue, casein, soybean epidermis and other proteins, which are hydrolyzed with hydrochloric acid, nitrosation is used to extract imine, and then purified and crystallized by resin chromatography. The yield is about 7.0%.

Used as a biochemical reagent. It is a multifunctional reagent for synthesizing nerve-stimulating kainoid and antifungal echinocandin. It can also be used for the synthesis of chiral ligands, which can be used for asymmetric ethylation of aldehydes.

L-Hydroxyproline is a natural component of animal structural proteins (such as collagen and elastin).
