Benzoic acid and its sodium salt, sodium benzoate, are very commonly used as food preservatives. Under acidic conditions, it has an inhibitory effect on yeasts and molds. When the pH value is 3, the antibacterial power is strong, and when the pH is 6, it has a very poor effect on many molds.
The maximum usage of concentrated fruit and vegetable juices in plastic barrels used in the food industry must not exceed 2.0g / kg; the maximum usage of jams (excluding canned food), fruit juice (flavor) beverages, soy sauce and vinegar is 1.0g / kg ; The maximum usage in soft candy, wine, fruit wine is 0.8g / kg; in low-salt pickles, sauces, preserves, the maximum usage is 0.5g / kg;
