White to slightly yellow crystalline powder. Melting point is 198°C. 1g of this product is soluble in 800ml of water and slightly soluble in ethanol. The optical rotation [α]20/D is -39.3° (C=5.7, H2O). Quickly get wet in the air. High temperature resistance, relatively stable in acidic and alkaline solutions.
Stevioside Usage
The product has a cool and sweet taste, and the sweetness is about 200-300 times that of sucrose. When the concentration is high, it will have a bitter taste, and the sweet taste will not disappear easily in the mouth. This product is the closest natural sweetener to sucrose. As a calorie-reducing food sweetener, it also has the effect of reducing pressure. It is often used in combination with sodium citrate to improve the sweetness. As a sugar substitute for sucrose, the maximum substitute amount should not exceed 1/3 to avoid aftertaste. According to GB2760-86, it can be used for liquid and solid beverages, and the amount of candies and pastries is according to normal production needs. The disadvantage of this product is its large molecular weight and poor permeability. Mice and rats oral toxicity LD50>8.2g/kg.
